Best Indian Curries for Beginners: Mild and Creamy Options

Five mild curries that taste like a lot without hurting at all — ranked from gentlest to most interesting.
"Mild" doesn't mean "less flavor." It means we hold back the chili and let the spices do the work. These five are the ones we hand to anyone starting out, in order of gentleness.
1. Korma — the mildest
Yogurt, cream, and ground cashew or almond, with cardamom and a touch of sweetness. Thick, pale, faintly nutty. There is essentially no heat in a korma. If someone at your table is nervous, order this and watch them relax.
2. Butter chicken (murgh makhani)
Chicken cooked in the tandoor first, then simmered in tomato, butter and cream. Slightly sweet, gently smoky from the oven. This is the most beloved Indian dish in the world and it deserves it. Start here if you only order one thing.
3. Malai kofta / malai boti
"Malai" means cream. Meatballs or chicken in a mild white gravy. Rich, soft, comforting.
4. Palak paneer
Spinach cooked down with cubes of fresh cheese, finished with cream. Earthy rather than sweet, and the most vegetable-forward of the mild options. Even people who claim not to like spinach finish this.
5. Chicken tikka masala — mild, with more going on
Tandoori chicken in a tomato-onion masala. Ordered mild, it's still the most complex of the five: more onion depth, more spice character, less sugar than butter chicken. This is the one to graduate to on visit two.
Also worth knowing
Dal makhani — black lentils simmered for hours with butter. Vegetarian, mild, and probably the single most satisfying thing on any North Indian menu.
How to order mild properly
Say "mild" when you order, not after. Ask for chili or green chilies on the side if you want to experiment mid-meal. Get raita — it makes everything gentler. And pair a mild curry with something from the tandoor so the table isn't all one texture.
