Best Indian Breads: Naan, Roti, Paratha Explained

Naan, roti, paratha, kulcha — what each one actually is, and which to order with which dish.

Bread is not a side dish in a North Indian or Pakistani meal. It's the utensil, the vehicle, and often the best thing on the table. Here's what's what.

Naan

Leavened white-flour dough, slapped onto the inside wall of a tandoor, cooked in about ninety seconds. Puffy, blistered, chewy, brushed with butter. Because it needs a tandoor, naan is a restaurant bread — almost nobody makes it at home.

Order garlic naan with anything saucy. Butter naan if you want the dough to be the star. Cheese naan if you're bringing kids, or being honest about what you want.

Roti / chapati

Whole wheat, unleavened, cooked on a dry griddle. Thinner, plainer, and much lighter than naan. This is the everyday bread in most South Asian homes. If you're eating a rich curry and don't want to feel heavy afterward, order roti instead of naan.

Tandoori roti is the same whole-wheat dough, cooked in the tandoor. Slightly crisper, a little smoky.

Paratha

Layered. The dough is rolled, buttered, folded and rolled again, then griddled until flaky. Richer than roti, and often stuffed — potato (aloo), cauliflower (gobi), or minced meat (keema). A stuffed paratha with yogurt is a whole meal.

Kulcha

Naan's stuffed relative — usually onion or potato, baked in the tandoor. Traditionally eaten with chole.

Puri and bhatura

Deep fried and dramatically puffed. Bhatura is bigger, tangier, and comes with chickpeas as chole bhature. Puri is smaller and often served at breakfast.

How much to order

One bread per person, then reorder. Bread goes cold, so it's better to get a second round hot than four at once. If your table has three curries, get a mix — garlic naan plus roti gives you both richness and relief.

The pairing cheat sheet

  • Butter chicken, korma, dal makhani → garlic or butter naan
  • Karahi, bhuna, dry tandoori dishes → tandoori roti
  • Chole → kulcha or bhatura
  • Just want breakfast → aloo paratha with raita
